Cookery Day Course – Sushi for Beginners
Saturday 4 June

For people who appreciate sushi but to a limited degree and would like to learn more about its origins and the origins of other Japanese dishes.

Learn from Simon Phillips how cook perfect sushi rice and how to master other basic sushi skills, plus all the essential ingredients required to enjoy sushi at home.

A sushi lunch at the end of the session served at in the demonstration kitchen.

Cookery Day Course – Fish and Shellfish
Saturday 18 June, Saturday 9 July and Saturday 30 July

This course will teach you about the wide variety of unendangered shellfish and fish found in our local waters – learn about boning and filleting fish (including a master class in how to fillet a flat fish), shaped and flavoured breads, how to make sweet pastry and creating stocks, sauces, soups from the  bi-product, how to cook the perfect risotto and making ice cream.

Ideal for people with cooking experience but who feel they are limited by their current range of skills, this intermediate course introduces advanced skills and food styles.

Cookery Day Course – Grow & Eat your Own: The Kitchen Garden
Saturday 16th July and Saturday 6th August

Commencing with a tour of the 4-acre hotel walled garden, the acclaimed garden designer Susan Cunliffe-Lister explains her design principles and recommended programme of planting for a vegetable and fruit garden. Enjoy the hands-on experience of picking herbs, vegetables and fruit for the course, before entering the cookery school kitchen to see innovative ways to cook in harmony with the four seasons.

Susan will then give a very relaxed Q&A session over lunch, before guests end the day with a seedling or cutting to take home.

£150 per person
